
Hong Kong Airlines has announced a new collaboration with YUE, the acclaimed Cantonese restaurant at Sheraton Hong Kong Tung Chung Hotel, to bring the authentic flavours of Lantau Island to the skies. Starting October 2025, Business Class passengers will enjoy a rotating menu inspired by Hong Kong’s culinary heritage, crafted by Executive Chinese Chef Jacky Chung Chi Keung.
A Taste of Lantau at 30,000 Feet
This partnership highlights Hong Kong Airlines’ commitment to showcasing the city’s unique culture through food. The menu draws inspiration from four distinctive local ingredients: dried shrimp, honey, dried squid, and fish maw. Each dish is designed to capture the essence of Hong Kong’s natural bounty—from the ocean breeze of fishing villages to the sweetness of mountain honey.
Monthly Culinary Journeys
Passengers can expect a phased rollout of menus, each month offering new dishes:
- October: Steamed garlic dried shrimp with winter melon, and honey-glazed beef short ribs.
- November: Sauteed dried shrimp with chive flower, and braised fish maw with mushrooms in oyster sauce.
- December: Braised pork with dried plaice and chestnuts, plus steamed pork patty with dried squid and XO mushrooms.
These dishes are carefully adapted for inflight dining, with Chef Jacky employing precise techniques—such as multi-stage braising and temperature control—to ensure flavours remain rich and authentic even at cruising altitude.
